If you are a good and experienced functional analyst, you can choose projects (any type of projects).
FICO, MM, SD are core modules.
Don't select a module based on the replies to this question.

The question of getting work, being billable OR sitting on bench - is something that is in the minds of many many SAP consultant. Lot of discussions daily happen at work and time is spent in thinking about this topic.
But try to not think about this now or in the future. If you want continuous work, you have give good quality work back to clients. And they will then appreciate and want to keep you, for more tasks/assignments/requirements.
If you complain, argue, dont have clear understand of concepts, donot give timely solutions, inflate/exaggerate the time required for a task; then you can be of any module but you will not get long term work from clients.
So, work hard, be an expert in your module, be constructive, be solution oriented; and client will not let you go!
